Popular Kenyan ‘Nyama Choma'(grilled meat)

‘Nyama choma’ is Swahili for grilled meat. If you are planning to travel to Kenya, then add this popular food to your ‘…to taste food…’, I promise, you will get hooked. You can grill the meat at home, or go to a Nyama choma joint that does this as a business. So as always, I will share the recipe here, so you can try it on your own time at home.

Recipe

2 kg of  beef  piece(leg or ribs)

1 large chopped onion

3 ripe chopped tomatoes

1 small size green chili

a bunch of chopped coriander 

1 tablespoon salt

Charcoal grill with a mesh

In a bowl, mix up the chopped onions, tomatoes, coriander, and chili.

Sprinkle a pinch of salt in there, give it a good mix, and set aside.

Clean your meat, let it drain the excess water then season with salt to taste (typical Kenyan nyama choma doesn’t need a lot of herbs, however, you can season or marinate yours with your preferred herbs).

Place your meat pieces on the charcoal grill, on medium heat.

Turn the meat regularly, so as to allow both sides to cook evenly without drying out on one side. You want your meat outcome to be tender and juicy.

Grill for approximately 1 hour. You may want to grab a tusker(Kenyan beer) as you do this, but please don’t get drunk, or else your meat will turn into a ‘burnt offering’, don’t say I didn’t warn you.

When ready, cut the meat into small pieces.

Serve hot with smoking hot Ugali and kachumbari.
